The Science of Gelato | Italian Research Day in the World 2025

On the occasion of Italian Research Day in the World 2025, the Italian Institute of Culture and the Embassy of Italy in Tel Aviv are delighted to present “The Science of Gelato” — a lecture and gelato tasting on Tuesday, April 22, 2025, at Arte Glideria, Nahalat Binyamin St. 11, Tel Aviv.

The lecture, led by Prof. Giuseppe Falini, Scientific Attaché at the Embassy of Italy in Israel, will explore the science behind the structure and texture of gelato. It will focus on how freezing, crystal formation, and ingredient interactions affect the final product. Special attention will be given to the role of stabilizers, emulsifiers, and freezing speed in shaping consistency, quality, and taste. The talk will offer interesting insights for anyone curious about the science of gelato.

Participants will also enjoy a special gelato tasting by Arte Glideria.

The event will be conducted in English. Admission is free, but registration is required due to limited seating. Please register at iictelaviv@esteri.it.
